Wheat Pita Bread Akawi Cheese Melts with Baba Ghanouj Dip are a warm,

cheesy, and ridiculously easy Mediterranean-inspired meal, vegetarian and perfect for Lent! Made with

Mediterranean Bread Company’s wheat pita bread, melty Akawi cheese,

and creamy baba ghanouj, this recipe is perfect for a quick lunch,

snack, or simple dinner.

Ingredients:

β€’ 2 Mediterranean Bread Company Wheat Pita Breads

‍

β€’ 6–8 oz Akawi cheese, sliced

‍

β€’ 1/2 cup baba ghanouj (for dipping)

‍

β€’ 1 tablespoon olive oil or butter (for toasting)

‍

β€’ Handful of fresh parsley (optional)

‍

β€’ Black pepper to taste (optional)

‍

β€’ Optional add-ins: sliced tomatoes, cucumbers, or olives

‍

‍

‍

Instructions:

‍

Warm the wheat pita breads in a toaster or on a skillet until soft.

‍

Slice each pita open to create a pocket (or cut into halves if you

prefer wedge-style melts).

‍

Stuff each pita with sliced Akawi cheese.

‍

Heat a skillet over medium heat and add a little olive oil or butter.

‍

Toast the stuffed pita for 2–4 minutes per side, pressing lightly,

until the pita is golden and the cheese is melted. (Covering the pan

for a minute helps the cheese melt faster.)

‍

Slice into wedges and serve immediately with baba ghanouj on the side

for dipping.

‍

Optional: Sprinkle with parsley and a little black pepper before serving.

Tips:

‍

β€’ If your Akawi is extra salty, soak the slices in water for 10–15

minutes, then pat dry before using.

‍

β€’ Make it a full plate by serving with cucumber, tomato, and olives on the side.

‍

β€’ For crispier dippers, cut the pita into triangles and toast the

cheese-filled pieces like mini grilled-cheese wedges.
