Wheat Pita Bread Akawi Cheese Melts with Baba Ghanouj Dip are a warm,

Ingredients:

β’ 2 Mediterranean Bread Company Wheat Pita Breads

β’ 6β8 oz Akawi cheese, sliced
β
β’ 1/2 cup baba ghanouj (for dipping)
β
β’ 1 tablespoon olive oil or butter (for toasting)
β
β’ Handful of fresh parsley (optional)
β
β’ Black pepper to taste (optional)

β’ Optional add-ins: sliced tomatoes, cucumbers, or olives

Instructions:

Warm the wheat pita breads in a toaster or on a skillet until soft.

Slice each pita open to create a pocket (or cut into halves if you
prefer wedge-style melts).

Stuff each pita with sliced Akawi cheese.

Heat a skillet over medium heat and add a little olive oil or butter.
β
Toast the stuffed pita for 2β4 minutes per side, pressing lightly,
until the pita is golden and the cheese is melted. (Covering the pan
for a minute helps the cheese melt faster.)

Slice into wedges and serve immediately with baba ghanouj on the side
for dipping.

Optional: Sprinkle with parsley and a little black pepper before serving.

β’ If your Akawi is extra salty, soak the slices in water for 10β15
minutes, then pat dry before using.
