Wheat Pita Bread Baba Ghanouj + Feta Pita Pockets are a quick, flavor-packed option that combines creamy baba ghanouj, tangy feta, and crisp veggies, all stuffed into Mediterranean Bread Company’s wheat pita bread. It’s perfect for an easy lunch, light dinner, or a no-fuss snack plate.

‍Ingredients:
• 2 Mediterranean Bread Company Wheat Pita Breads
• 1/2 cup baba ghanouj (Cortas grilled eggplant)
• 1/3 cup crumbled feta (Greenland feta)
• 1/2 cucumber, chopped or sliced
• 1 cup cherry tomatoes, halved (or 1 tomato, chopped)
• 2 tablespoons olive oil
• 1 tablespoon lemon juice
• Handful of fresh parsley (optional)
• Salt and pepper to taste

‍ Instructions:

  1. Warm the wheat pita breads in a toaster or on a skillet until soft.
  2. In a small bowl, mix olive oil, lemon juice, salt, and pepper to make a quick dressing.
  3. Open each pita and spread baba ghanouj inside.
  4. Add cucumber, tomatoes, and parsley.
  5. Sprinkle with feta and drizzle with the dressing.
  6. Fold, serve immediately, and pretend you didn’t just make something impressive in 10 minutes.
